Baked Honey Soy Chicken

Do you ever get to the point where you just stare at everything you have in the fridge with the most confused look on your face wondering WHAT THE HELL WILL I MAKE FOR DINNER? Well... I do this all the time and with my countless hours spent on Pinterest this recipe will sure to win over the family- no more boring chicken meals here! The best thing about this recipe is it's pretty low maintenance, aka. easy weeknight dinner! so here's the recipe...

Stir together:

1/4 cup honey
1/3 cup light soy sauce
1/2 tsp freshly ground black pepper
4 cloves minced garlic
1 tbsp finely grated fresh ginger root

To a large Ziploc bag or large mixing bowl add:

4 large chicken breasts, (not boneless, skinless)

Pour the marinade over the chicken and store in the fridge for a couple of hours or overnight.

Place the marinaded chicken breasts on an aluminum foil lined cookie sheet and bake at 375 degrees F, uncovered, for about 45 minutes or until the chicken is fully cooked.

Do not throw out the marinade. While the chicken is cooking simmer it over low heat and brush it on the chicken about every 10 minutes as it cooks.
